My Breakfast Smoothie!

Two days ago I got my wisdom teeth extracted. Also two days ago, Tim came down with a viscous cold. So as you can imagine, the last two days have consisted of us each taking care of the other, (and insisting the other rests).

This post isn't actually going to be about that though; I am going to share my all-time favorite smoothie recipe! Since Tim has been sweet enough to join me in the no-solid-foods-for-a-week thing, we've been enjoying lots of juices and smoothies, and each time I've shared my breakfast smoothie with him, or anyone else, they always love it!

This isn't your typical smoothie, it only has one fruit in it. It's very filling, high in protein and fiber, completely healthy (and vegan if you make it with coconut sugar instead of honey), and I'm being totally honest when I tell you it tastes like a MILKSHAKE. Go ahead, give it a whirl!

Peanut Butter Banana Oatmeal Smoothie

Ingredients
  • One ripe banana
  • 1/2 cup raw, old fashioned rolled oats
  • One heaping spoonful of peanut butter (Try to get all natural peanut butter, you want it to only contain peanuts and salt)
  • One tablespoon of raw, wild honey (or coconut sugar)
  • One or two teaspoons of cocoa powder 
  • One tablespoon organic flax seed (ground or whole)
  • Four or five ice cubes
  • One to one and a half cups unsweetened almond milk  
Directions
Blend everything but the ice cubes in a single-serve blender (this works best for just one serving, if you use a full sized blender, double the recipe). When it's nice and smooth, add the ice cubes and blend again until smooth. Sprinkle a little nutmeg on top.


There you have it! It will be very satisfying, and very delicious. I drink one of these at least three times a week. It keeps me full for hours, and it definitely satisfies my persistent sweet tooth!  

You can also make a few modifications here and there to mix it up. Sometimes I through in a handful of pecans, some yogurt, or I make it with whole dairy milk instead of almond milk. Let me know what you think!
